Loaded Potato Soup

Ingredients
  

  • 4 Strip Bacon Cut into pieces
  • 1 Small Onion Diced
  • 3 Cloves Garlic Minced
  • 6 Medium Potato Diced
  • 1 Cup Corn
  • 1 Large Carrot Grated
  • 3 Cup Chicken Broth Any Broth
  • 1/8 Teaspoon Cayenne Pepper
  • 2 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 1 Cup Heavy Cream
  • 3 1/2 Tablespoon Flour

Method
 

  1. On high heat cook bacon, remove from pot leaving bacon grease.
  2. Add in onion and cook for 3-5 minutes, add in garlic and cook for an additional minute.
  3. Next, add in potatoes, corn, and carrots.
  4. Give a good mix.
  5. Add in chicken broth, cayenne pepper, salt, black pepper, and cooked bacon.
  6. Give a good mix.
  7. Cook mixture on high pressure - 10 minutes - with a quick release.
  8. Whisk together cream and flour.
  9. Stir into pot.
  10. Using a potato masher, mash some of the potatoes. Don't over mash. If you would like more of a smooth texture mash all potatoes.
  11. On high heat bring to a boil. Boil for 5 minutes.
  12. Serve and top with bacon and cheddar.
