Method
Crust:
- Cut butter into cubes, add sugar and flour.
- Combine by using a pastry cutter, or two knifes.
- The pastry should be able to press together but still be very crumbly.
- Press into a 9×9 pan lined with parchment paper.
- Bake at 350F for 20-25 minutes.
Lemon Filling:
- While the crust is baking add fresh lemon juice to a medium mixing bowl.
- Whisk in sugar and flour until sugar is almost dissolved.
- Next, whisk in eggs, allow to sit for 10 minutes.
- Whisk again, pour on base immediately when it is done.
- Bake at 350F for an additional 20-25 minutes.
- Cool completely in pan before dusting with powdered sugar and cutting
