Method
- Combine flour, baking powder, baking soda, salt, and lemon zest.
- In a mixer cream together butter and sugar until fluffy.
- On low speed add egg and mix well.
- Mix in lemon juice.
- Alternate between flour and milk, starting and ending with flour.
- Fill muffin tins 3/4 full, bake at 350°F for 15-20 minutes.
- Cool for 5 minutes in pan before transferring to rack to cool.
