Ingredients
  

  • 1 3/4 Cup Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Lemon Zest Fresh
  • 1 Cup Sugar
  • 1/2 Cup Butter
  • 1 Egg
  • 2 Tablespoon Lemon Juice Fresh
  • 1 Cup Milk

Method
 

  1. Combine flour, baking powder, baking soda, salt, and lemon zest.
  2. In a mixer cream together butter and sugar until fluffy.
  3. On low speed add egg and mix well.
  4. Mix in lemon juice.
  5. Alternate between flour and milk, starting and ending with flour.
  6. Fill muffin tins 3/4 full, bake at 350°F for 15-20 minutes.
  7. Cool for 5 minutes in pan before transferring to rack to cool.
