Instant Pot Chili

Ingredients
  

  • 2 tablespoons oil
  • 1 medium onion diced
  • 1 large jalapeno, diced
  • 3 cloves garlic minced
  • 1 lb ground beef
  • 1 Tablespoon chili powder
  • 1 Teaspoon cayenne Pepper
  • 1 Teaspoon salt
  • 1 Can diced tomatoes
  • 1 cup red kidney beans cooked
  • 1 cup chicken stock
  • 1/2 cup shredded cheddar cheese for garnish

Method
 

  1. Turn instant pot on sauté on high. Add oil and let heat
  2. Add onion cook 3-5 mins
  3. Next, add jalapeño cook 2-3 minutes
  4. Garlic cook 1-2 minutes
  5. Now, add ground beef cook till no longer pink about 5-8 minutes
  6. Add tomatoes, chicken stock, chili powder, Cayenne pepper and salt.
  7. Stir to combine ingredients well.
  8. Turn off sauté mode put lid on instant pot. Pressure cook on high for 30 minutes with a quick release.
  9. Turn on sauté mode let simmer for 30 minutes stirring occasionally.
  10. Serve with some shredded cheese on top.
