Add oil to instant pot turn sauté mode on high
Once hot add chicken thighs meat side down cook for 5 mins
Use tongs to turn chicken over cook for another 2 mins
Add onions cook for 2 mins stirring occasionally
Add garlic cook for an additional 1 min
Add salt, Cayenne pepper, coriander powder, ginger powder, turmeric powder, Curry powder and gram masala.
Mix everything together well and cook seasoning for 1 to 2 minutes until more fragrant
Add rice and stir all together until everything is coated well
Turn off sauté mode
Add water, give a stir and place lid on instant pot
Cook high pressure for 6 minutes with a 15 minute natural release
Remove lid and fluff rice
Serve immediately and enjoy
