Crust:
1 Cup Butter, Unsalted. COLD
1/2 Cup Sugar
2 Cups Pastry Flour
Lemon Filling:
3/4 Cup Lemon Juice, Fresh
1/4 Cup Flour
1 1/2 Cup Sugar

Crust:
Cut butter into cubes, add sugar and flour.
Combine by using a pastry cutter, or two knifes.
The pastry should be able to press together but still be very crumbly.
Press into a 9×9 pan lined with parchment paper.
Bake at 350F for 20-25 minutes.
Lemon Filling:
While the crust is baking add fresh lemon juice to a medium mixing bowl.
Whisk in sugar and flour until sugar is almost dissolved.
Next, whisk in eggs, allow to sit for 10 minutes.
Whisk again, pour on base immediately when it is done.
Bake at 350F for an additional 20-25 minutes.
Cool completely in pan before dusting with powdered sugar and cutting
