Ingredients

1 1/2 Cup Flour
1 1/2 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
2/3 Cup Butter
3/4 Cup Sugar
3/4 Cup Brown Sugar
1/4 Cup Unsweetened Apple Sauce
1/4 Cup Sour Cream
1 1/2 Teaspoon Vanilla
3 Eggs
2 Cup Carrots, Shredded

Instructions
In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Set aside. In another large bowl combine butter and both sugars.
Add apple sauce, sour cream and vanilla. Mix together until completely combined.
Add in eggs and mix until just combined.
Next add in flour and mix until everything comes together, fold in carrots.
Divide into 2 prepared pans or 3 prepared pans 2-8inch 3-6inch. Level batter out.
Bake at 350°F for 18-20 minutes or until toothpick comes out clean.
Let cool in pan for 10 minutes before transferring to wire rack.
