Loaded Potato Soup Recipe
Ingredients
4 Strip Bacon Cut into pieces
1 Small Onion Diced
3 Cloves Garlic Minced
6 Medium Potato Diced
1 Cup Corn
1 Large Carrot Grated
3 Cup Chicken Broth Any Broth
1/8 Teaspoon Cayenne Pepper
2 Teaspoon Salt
1 Teaspoon Black Pepper
1 Cup Heavy Cream
3 1/2 Tablespoon Flour
Instructions
On high heat cook bacon, remove from pot leaving bacon grease.
Add in onion and cook for 3-5 minutes, add in garlic and cook for an additional minute.
Next, add in potatoes, corn, and carrots.
Give a good mix.
Add in chicken broth, cayenne pepper, salt, black pepper, and cooked bacon.
Give a good mix.
Cook mixture on high pressure – 10 minutes – with a quick release.
Whisk together cream and flour.
Stir into pot.
Using a potato masher, mash some of the potatoes. Don’t over mash. If you would like more of a smooth texture mash all potatoes.
On high heat bring to a boil. Boil for 5 minutes.
Serve and top with bacon and cheddar.
How to make loaded potato soup pictures

On high heat add 4 strips of cut bacon

Cook the bacon on high for about 5 minutes

Remove the bacon leaving the bacon grease in the instant pot.

Add 1 small onion diced to the instant pot

cook in the bacon grease until tender about 3-5 minutes

add in 3 cloves of diced garlic

Cook garlic for about 1 minute

Add in 6 medium potatoes diced

Stir everything together.

Add in 1 Cup of frozen corn or mixed veggies.

1 large carrot, grated.

Stir everything together.

Next add in 3 cups of chicken broth.

Add in 1/8 teaspoon of cayenne pepper, 2 teaspoons of salt and 1 teaspoon of black pepper.

Add the bacon back into the instant pot.

Stir everything together

Cook on High Pressure for 10 minutes with a quick release. Open the valve and let all the pressure out after 10 minutes.

Whisk together 1 cup of cream and 3 1/2 tablespoons of flour.

Add the cream and flour mix to the instant pot

Mash the potatoes with a potato masher.

Bring everything to a boil.

Once boiling it is ready to serve. Top with bacon and lots of cheddar
