Cheese Cake Recipe
INGREDIENTS:
Crust
1 C. Graham Cracker Crumbs
3 Tbsp. Sugar
3 Tbsp. Butter, Melted
Filling
3 Packages Cream Cheese 750G
3/4 C. Sugar
3 Eggs
1 Tsp. Vanilla
INSTRUCTIONS:
Crust
Combine the graham cracker crumbs with sugar.
Melt butter and add, mix well.
Press into the bottom of a spring pan with parchment paper
Filling
Combine cream cheese with sugar, beat on medium speed until smooth.
Add eggs one at a time. Mix well after each egg. Once all added beat for 2 minutes.
Blend in vanilla then add it into pan on top of crust.
Bake at 325F for 45-50 minutes.
Completely cool in pan before transferring to a plate. Serve after cooled, Store in fridge.
Making the Cheese cake

Empty 3 containers of cream cheese into a mixer. I am using whipped cream cheese but you can use the blocks for this recipe. The whipped cream cheese is great to use because you can use it from being cold and it does not risk breaking your mixer if you forgot to pull the cream cheese out. That being said you should always use room temperature cream cheese to make cheese cake. It helps with the mixing process and baking.

Add in 3/4 Cup of sugar.

Cream together cream cheese and sugar until smooth on medium speed. Since i am using cold cream cheese I mixed this for a few minutes longer to get it more to room temperature.

Add in eggs one at a time mixing well after each egg. Finally mix for a few minutes before adding vanilla.

Add 1 teaspoon of vanilla. Mix well.
How to make the Base

In a small bowl add 3 tablespoons of sugar

Add 1 cup of graham crackers to sugar.

Mix together well.

Add 3 Tablespoons of melted butter to sugar/graham cracker mixture

Mix together very well, you should be able to press together. Make sure nothing is dry by pushing to the side of the bowl.

Press into prepared pan. The pan is just a spring pan with parchment on the bottom.

Press. Press. Press.

Pour cheese cake mixture over the graham cracker crust.

Smooth out cheese mixture. Bake at 325F for 45-50 minutes.

when done the middle should have a little jiggle in the middle. The center will continue to cook when cooling. Cool completely in pan for about an hour. Remove from pan, top with topping and enjoy. If cheese cake has a crack in the middle cheese cake has been over cooked and will be a little dry when eating. Remove from pan after 5 minutes of cooling as carefully as you can to avoid cooking even more.
